I have perfected this super simple recipe for Blueberry Syrup. There is NO sugar. Instead, blueberry_pancakeI use agave which is actually sweeter than sugar and is low glycemic. Blueberries are also very high in antioxidant. Hope you enjoy this as much as I do.

Original recipe makes 10 servings. (I always make extra to store the extra and use on yogurt.)
  • 1 cup water
  • 1 cup fresh blueberries (Feel free to go over a cup)
  • 3/4 cup Agave
  • 2 teaspoons of corn starch

Stir water, agave, and blueberries together in a saucepan and bring to a boil. Reduce heat to medium-low and simmer until the berries begin to pop and the syrup thickens, about 10 minutes. BE CAUTIOUS of it overflowing, so check often.

After about 10 minutes of simmering, add 2 teaspoons of corn starch to thicken. Be sure to use wisk as you’re adding to prevent clumps. Simmer for another 3-5 minutes and serve.
